It seems like amnestied guys can be signed and traded, maybe after 30 days?  Anyone know?

If I recall correctly you can't trade him until the following July 1.

If we still haven't made any of our signings official, do we have a bit of cap space? I'm not talking anything major but enough to bid on Haywood?

No, because there are cap holds on KG, Jeff Green, Bass, etc... KG's cap hold is bigger than his contract.  We would have to give up the rights to some of those guys.
Newbie here. What does 'give up rights' mean? Does it mean we cant sign those guys anymore? Also, does a player's cap hold count towards the team's cap room even after we sign him officially (from reading this thread, for example, I understand that KG will get signed for a salary that is lesser than his cap hold. So, which of the amounts will actually count towards our cap room, is the question I guess, if that even makes any sense).

Cap holds are based on previous salary.  They prevent the loophole of teams signing free agents with cap space before re-signing free agents with Bird rights.  They exist only until you either sign the player or renounce his rights.  Renouncing a player means giving up a player's Bird right, freeing the hold and creating salary cap space.  You can still sign the player with cap space or a salary cap exception, including the veteran's minimum exception.
