Naturally, I like the pick

When I saw your new logo and then your original pub name I was praying to get my pick before you.  I would have taken him #1 overall...bar staff is severly underated in terms of importance. TMIMITW is going to draw in plenty of business for me and he will have everyone enthralled with his stories of awesomeness as they continue to spend money at Sam N Ella's.  He also has knowledge of the classic cocktails and spirits and will mix up the perfect cocktail every time.  TMIMITW will also run our after hours illicit gambling in our private, hidden back room and with his strength and skills in all fighting styles he can help out with bouncer duties as well which will give me a little leeway when choosing my bouncer...

Interesting.  That being the case, the only straight up liquor I'd choose is "______________", I think.  People just don't drink liquor straight up much, unless you're going for a saloon.  I'd go for a more broadly-based specialty drink.

My thinking was that there are few things that lend 'legitimacy' to a bar like aged scotch, whiskey, and bourbon. Yes, I will also have a fireplace, and walls of rich mahogany.

I still recommend a saloon.
