Does pizza count?

If not, then I'd go with Thai, with Japanese close on its heels.
Celtics fan for life.

At the moment, Thai is my favorite, too (although I have not worked up to the super heat dishes, and when I make Curry it is mild/medium heat.  I have had Viet a couple times and like what I have had.  I just am a big fan of food, in general!  ;)

Indian or Thai, Vietnamese, and then Japanese
“Being a Celtic is, every decision you make is about the team. Every cut you make is about the team. Every pass you make is about the team. You take yourself out of it. It’s not for everyone. If you don’t want to win, don’t want to play team basketball, and it’s more about you then you’re probably not a Celtic." Doc 2010

I don't consider Chinese food to be "ethnic" since I've grown up eating it just about everyday.

Southern American food is my favorite "ethnic" food. If you don't like fried chicken and BBQ, you have no soul.

Yes.  Mexican food with plenty of jalapenos and hot sauces.  I love them all: burritos, quesedillas, tacos, etc. and I could eat Mexican every day.  So good.

Pizza is sorta like saying "bread" at this point.  The pizza in different parts of the world is totally different.

Indian for me.  Italian food is great but I spoiled myself with it while living in Italy.  I have also developed an appreciation for German food.

See this is why I put (authentic) in front of the Chinese thing.

Pizza is a dish.  Not an ethnic food from the country of The People's Republic of Pizza.

Rule of thumb.   If you got it in less than 5 minutes, or someone in a uniform served it to you, or the name of the place had the word "express" in it, and then you ate it at an airport in London, then flew to LA, and had the exact same meal at the exact same price, then flew to Hong Kong and had it again it is no longer "ethnic" food.

Now it is corporate food.

I am sorry. If you see it at every single strip mall in New Jersey it doesn't count as "ethnic" food.   That's why "Chinese" and "Pizza" do not count as "ethnic food".  If you ate it in China town or Little Italy it totally counts.   There is a difference. You gotta draw a line in the sand somewhere.

Vietnamese restaurants are popping up now like Thai did a couple years ago.  The one where I got my taste for it is not far from me, in Florida!  Keep checking in your area.

I will but my home sometimes makes Little House on the Prarie look like downtown Philly

There was a phenomenal one near us, kind of in the middle of nowhere, on the outskirts of Pittsfield.  Looked like a total dirt place, just like a crappy Chinese joint.  Butm the food was incredible.  If anyone watched Top Chef, it was the place run by Hung Huynh (season 3 winner)'s family.

The [peeve]er is that for some [dang] reason.....   they've converted it into a steakhouse!  Pretty sure the family still runs it, and they still have the spring rolls, but...  I mean, I like a nice steak, but the Vietnamese place was otherworldly.

My friend, Rashanee, had a Thai restaurant and her brother, Mong, was the chef.  He gave me his recipe for red curry.  (I have Americanized it myself  ;) because I like veggies, and add lots more than the original.  They are the ones who took me to Vietnamese...a mom and pop restaurant (in a strip mall!)  but they said it was very authentic and good.  I grew up more on New England fare, and hotel/restaurant meals.  Love Italian, French and Chinese (from the different provinces).
