I have never tried grassfed (not actually sure where to get it...wholefoods?).  I might have to try that next time.  I have no problem investing in a good steak...particularly knowing how much money I am saving on it making it myself.
Whole Foods or Fresh Market, although lots of regular grocery stores also carry it now.  You will have to take out a second mortgage on your home, though.  We have an Italian market (Mazzaro's) near me with really good meat market section.  Strangely, they also sell Kobe beef. I have never tried it.  They also have a terrifc deli section, a coffee bar, a wine cellar and an Italian bakery.

Oh, forgot to mention Bison!  Buffalo is all grass fed, I think, and it is illegal to give them any chemical additives.  AND it has less fat than fish. The perfect red meat.

Mazzaro's sounds awesome.

the steak I get, I get in 'shares' through the link I gave Chris. If you go by total weight, I think it works out to be something like $5 a pound or close. Pretty good deal, IMO, for grass fed responsibly raised beef, pork, and lamb.

Did you have it as a novelty or is it something that some people eat on a regular basis?

Like..I had alligator once, breaded and fried, to dip in jalapeño-raspberry sauce....and I loved it, but I wouldn't want to eat it more than once a year.

I like actual medium (hot pink center) steaks which means I order medium rare.  But I find my tastes are veering a little rarer as time goes one.  NY Strips are definitely my favorite cut, though a good prime rib is always awesome.

For obscure meats, bison is awesome: I highly recommend anybody try it when they get the chance.  Ted's Montana Grill is a small restaurant chain that serves bison steaks and burgers that are really good.  I also liked gator when I tried it.  And I'll eat pretty much any kind of game bird but that's probably a bit too far off-topic.

I'm a huge fan of *good* prime rib.  Unfortunately, it seems like cooks screw this up more than they do any other cut of meat, from my experience.  I had it at my wedding, though, and it was fantastic.  I asked the chef how it was made, and he asked "do you really want to know?" and then talked about an overnight veal jus reduction, etc.  In other words, a lot of effort that I'd never go through to cook for myself, but it was a meat of beauty.

Worst meat: pigeon. Just horrible.

My philosophy on meat temperature: leave it up to the chef, assuming the chef knows what they are doing. Change the cooking of a steak and you change the balance of the dish by changing its texture and moistness.

Don't know about ostrich, but Emu is a small niche that is a red-type meat that can be consumed as a regular meat.
