Question:  What happens if Gordon doesn't sign their QO? does he just become a free agent? Is he still their property or what?

He remains a restricted FA.  So his only option (in the NBA anyways) would be to sit out the year, or sign an offer sheet with another team, and hope Chicago doesn't match.

I don't get this whole thing.  I know he is just trying to force a trade...but he has no foot to stand on here.  Unless he wants to play in Europe, he just is not going to get what he wants this year.  His best bet is to play out the year on the QO, and then become an UFA after next year, but he is making it much tougher to even do that.

My guess is he probably just goes to Europe.  The problem is, when he comes back, he is going to be in the exact same predicament, because the Bulls will (I believe) still hold his RFA rights.

Gordon is clearly not looking to win a championship, he will go to the crappiest team if it means he gets his money.
and no, he is not worth what he thinks he should be paid, Deng is and should be the highest paid player in the bulls, would love to have him in green in the future

Neither Deng nor Gordon are $80M basketball players.  If the best player should be paid the  most, then yes, Deng is probably the best player they have, but he isn't worth that kind of money.
We're the ones we've been waiting for.

In order to keep his rights, the Bulls will also need to keep a gigantic cap hold. If Gordon leaves to Europe, I think Chicago will eventually renounce him. But I don't believe he goes to Europe. I can't see an European club offering him much more than his QO.
