I don't want to get too specific but I am kind of in panic mode right now over how much I owe in credit cards.

I have a couple that have deferred finance charges. I have been keeping up with my payments and I usually pay over the minimum the biggest issue right now is that I am jobless. I am confident to find work but I am wondering how bad the finance charges could get.

I also want to make sure my math is correct.. If the APR is lets say 18& and say you owe 1000 in a month then what you owe is 180/365 multiplied by the days in your billing cycle.

Honestly I have pretty much hit the panic button because on all my cards combined I am up +10,000 but I don't think I need to take any drastic measures other then a drastic change in lifestyle.

Your math is ok. It's easier (and close enough) to just divide your APR by  12, so 18% would be 1.5% per month.

By deferred finance charges do you mean "no interest for 6 months (or a year or whatever)? I've done those before. If you buy something that says no interest for 6 months and you pay it off before the 6 months is over you pay no interest. But if you still have a balance at the end of the time frame then you have to pay the interst that you got out of. This can easily be well over $100 so try and get those paid off if possible.
